Our wines

All Mundoonen wines are made by us in our winery and our first wines were released in August 2003. The Mundoonen vineyards grow Shiraz and Viognier and the winery has local contract blocks of Riesling, Cabernet Sauvignon and Sauvignon Blanc. We use fruit exclusively from the Canberra District and hand-pick into small 32 litre fruit containers to ensure that the fruit arrives at the winery in perfect condition.

The fruit is hand-sorted and selected, then manually loaded into the de-stemmer or press, depending on the wine-making strategy chosen. At Mundoonen, we use an Australian manufactured Vintek bag-press for controlled and gentle pressing of the wine. The wine process uses heating, cooling and filtration equipment only as necessary to assist in our aim of making hand-made wines using optimized artisanal techniques.

Our red wines are aged in our C.1860s restored barrel shed. The maturation of Mundoonen red wine happens with the passing of time in good quality oak barrels. Our white wine and dessert wine is just as carefully and individually refined. With careful fruit selection and thoughtful wine-making choices we have so far been able to avoid the need to add acid or chemically de-acidify as is common practice in larger wineries. We do not use woodchips, tannin extracts, colour or flavour enhancing enzymes. Our wine is sulphured as lightly as is necessary to preserve the character of wine made from premium grapes.
